Act natural. Trust no one.
A five-minute round in a busy store. Every player looks like one of the shoppers, the thieves and the officers both. Thieves fill a bag and walk out the front door. Officers watch the crowd and grab the ones they are sure about.

Nobody wears a uniform.
The store is full of shoppers who browse, pick things up and carry them around, and every player looks exactly like them. Officers do not wear a uniform. An Officer looks like a shopper until the moment they grab someone.
The one thing a shopper never does is put an item in a bag. If you do it while nobody is looking, nobody will know. If an Officer sees it, you are caught, and for the rest of the round you play on their side.
How a round works
A round is five minutes. Everyone gets a role in secret at the start, one Officer for every three players, and walks in with the crowd. Your friends do not know what you are either.
Shoplifters pick things up like everyone else, then hide them in a five-slot bag when the aisle is clear. Walk out the front door and everything in the bag counts for your team. In the last minute it counts double, so the end of a round gets busy at the exit.
Officers watch the crowd and grab a thief when they are sure. The people nearby see it happen. A wrong grab is a strike, and three strikes puts you out for the rest of the round. A caught thief becomes an Officer, and nobody is told.
